Pineapple Popper

Warm weather always inspires my cocktail crafting. Although I love drinking whiskey neat, there comes a point during the year when an ice-cold cocktail is more fitting for the season. This week, we crafted a cocktail that combines the flavors of pineapple, orange, chiles, and bourbon for a sweet and spicy cocktail that will be a hit at your summer patio party. We call it the Pineapple Popper.

The Pineapple Popper is a versatile drink that you can easily modify to suit various preferences. The version we created has a little spicy kick, but you can easily amp up or tone down the spice. For a spicer cocktail, add a slice of Jalapeno. For a sweet version, you could leave out the bitters entirely. Either way you choose to enjoy the Pineapple Popper, you won’t be disappointed.

For this cocktail, we used Old Tub as our bourbon base. The woody flavor compliments the spice from the Muddle and Wilde syrup. Muddle and Wilde syrups can be purchased from their website here. If you haven’t tried these, you’ll definitely want to add them to your collection! Muddle and Wilde will take your cocktail crafting to the next level.

Our preferred triple sec is Stirrings Triple Sec Liqueur. It has a good orange flavor without being overly sweet. It is the perfect addition to your cocktail bar. You might prefer to go with a brand name like Cointreau, however, you won’t be disappointed by the price and quality of Stirrings if you choose the more budget-friendly option.

Ingredients

  • 2 ounces Bourbon
  • 2 ounces Pineapple Juice
  • 1 ounce Triple Sec
  • 1/2 tsp Muddle and Wilde Tamarind-Lime-Chile de Arbol Syrup
  • 1 slice Jalapeno

Instructions

  • Add the tamarind-lime-chile de Arbol syrup, bourbon, pineapple juice, and triple sec in a rocks glass.
  • Stir to combine the ingredients.
  • Top with ice.
  • Add a slice of jalapeno to the rim or add it directly to the drink for more kick.
